Ingredients
250g of walnuts
100g ground almonds
1 tsp ground cinnamon
½ tsp grated nutmeg
2 tsp baking powder
2 ripe bananas
3 large eggs
2 tbsp extra virgin olive oil
2 tbsp honey
Method
Preheat oven to 180c
Grease a loaf tin with a little olive oil
Grind the walnuts in a blender and mix in the ground almonds, spices and baking powder, transfer to a mixing bowl
Blend the banana, eggs, olive oil and honey then add to the nut mixture, stir well
Pour into loaf tin and bake for 30 mins
Turn out onto a wire rack and let cool
Delicious when still warm but also keeps well in an airtight container as it will keep moist and succulent in the middle.
You can serve as is, or with yoghurt and berries and a few crushed walnuts.
It also goes well with eggs and bacon!
